One of my favorite comfort food, crunchy tacos can be made plant-based and healthier by loading up with extra veggies.
Load up organic crunchy taco shells with the following options:
Plant-based protein (1/2 mushrooms and 1/2 Beyond meat crumbles with taco seasonings)
Black olives
LTO
Mashed avocado or guacamole
It's simple, delicious, and the more you tower with fresh veggies, the closer you'll be to the recommended 5 or more daily servings of fruits and vegetables. Feel free to get creative :)
