The perfect plant-based sandwich that you can make at home starts with marinated grilled tofu, topped with lots of veggies, in between deliciously grilled bread...this can all be done on the stove top.
Ingredients:
Firm Tofu
Choice of sauce or marinade (this example uses BBQ sauce)
Cabbage, Carrots, Radishes, Onions
Vegan Mayo
Lettuces and Microgreens
Sourdough Bread
Vegan Butter, Olive Oil, or Coconut Oil
Salt & Pepper
Directions:
Slice and marinate the tofu
Prep slaw: thinly slice green and/or red cabbage, carrots, radishes, and green or red onions and toss with vegan mayo, salt and pepper (best prepped night before and allowed to refrigerate overnight)
Pan fry or grill the tofu in coconut oil or other high heat oil, then set aside
Slice and grill the sourdough, first spread vegan butter or olive oil on each side of the bread (this can be done in the same pan)
Build your sando: Option to add mayo to the bread or skip it if that feels like too much oil, layer with tofu, slaw, microgreens and other greens like kale or arugula, place the second slice of grilled sourdough on top or enjoy open faced for less bread and more greens. We eat with our eyes first, so do whatever you want to make it visually appealing - then speak gratitude and dive in!
**Grocery shopping tips:
-Choose organic, local vegetables
-Opt for single source high quality olive oil
-Read the ingredients list on everything that is in a package and avoid things like artificial or natural flavor, high fructose corn syrup, palm oil, or any other weird ingredient you can't pronounce or just doesn't feel right
-Show the environment a little love and use paper bags or reusable bags for your produce, skip plastic packaging as much as possible :)
